Over in Frontierland by the Ranch Del Zocalo restaurant, you'll find a beautiful Dia de los Muertos (Day of the Dead) set up this time of year. A sign explains the Day of the Dead traditions and how the holiday is celebrated. They have several calaveras, ofrendas (altars), and traditional offerings. I really think it's a great educational experience for kids; especially those from the Midwest who had no exposure to that culture growing up (like me). Check it out next time you're at Disneyland during Halloween time.
